When a Rise & Bagel order arrives at your door in the morning, you're seeing the last few minutes of a process that started the day before.
The dough is mixed first.
Then we wait.
Our bagel dough goes through a 24-hour cold fermentation because we've found that giving it time develops the flavour and texture we're looking for.
The next morning starts early.
And by early, we mean the kind of early when most sensible people are asleep.
The bagels are shaped, boiled and baked.
Orders are packed.
Cream cheese and orange juice are added where ordered.
Then everything gets loaded up and we start driving.
Collingwood.
Wasaga Beach.
The Blue Mountains.
And the other communities on our delivery routes.
By the time most people are making their first coffee, we've already had quite a morning.
There's something we really like about that.
