A bagel is a pretty simple thing.
Which means there aren't many places to hide.
You need good flour.
Water.
Salt.
Yeast.
You need to give the dough enough time.
You need to boil it.
And then you need a very hot oven.
That's essentially what we've built Rise & Bagel around.
We don't want a long ingredient list.
We don't want to engineer a bagel to sit around for weeks.
And we're not particularly interested in figuring out how quickly we can make one.
We want the bagel you tear open at the breakfast table to taste like somebody cared about making it.
Because somebody did.
Simple food isn't necessarily easy food.
Quite often it's the opposite.
When there are only a handful of ingredients, every decision matters.
We like it that way.
