Why We Make Breakfast Overnight

Why We Make Breakfast Overnight

Long before most front doors open in the morning, the lights are already on at Rise & Bagel.

That's intentional.

We built Rise & Bagel around breakfast, and breakfast has a deadline.

Morning.

It actually starts the day before

Our bagels don't begin a few hours before they're delivered.

The dough starts the previous day and goes through a long cold fermentation before it becomes a bagel.

Then comes the work people generally don't see.

The dough is portioned and every bagel is rolled by hand. The bagels are boiled and then baked, beginning on bagel boards before finishing on a hot baking stone.

Orders are assembled.

And then we start driving.

Why go through all of that?

Because the experience we want to create isn't simply receiving a bag of bagels.

It's opening your door in the morning and finding breakfast waiting for you.

To make that happen, we have to work backwards from your morning.

That's why much of what we do happens while the community sleeps.

It's also one of our favourite parts of Rise & Bagel.

We get to see the dark roads, the first lights coming on in houses and, every once in a while, a sunrise worth pulling over for.

Then we leave breakfast at the door and head to the next one.

By the time your day is beginning, ours has been underway for quite a while.

We wouldn't have it any other way.
